I realized the other day that I have not been eating as much fish as I would like to, so last night I pulled some tilapia out of the freezer so that I would be forced to make some tonight for dinner. This is the dish that came to mind as I prepared our feast! Hope you enjoy it as much as we did!
Autumnal Crusted Tilapia
- Tilapia – 3 filets
- ½ – 1 inch of horseradish root, grated
- 1 apple, grated
- 2 tsp. rosemary, crushed
- Olive oil for drizzling
- Sea salt
- 1 c. fresh cranberries, cut in ½
Directions
Preheat oven to 375 degrees. Place tilapia filets on parchment paper (I forgot this step, and my pan was a pain to clean!). Drizzle with olive oil, and spread evenly with your fingertips over the raw fish. In a small bowl, mix together the apple, horseradish (1/2 inch if you don’t like it too zesty, up to an inch if you like it zesty!) and rosemary. Spread mixture evenly over the tilapia. Sprinkle with sea salt and drop cranberries on top and around.
Bake in oven for 25 – 30 minutes until fish flakes easily with a fork. Remove from oven and enjoy!
We served ours with sautéed greens (onions, garlic, collards, bok choy and green beans sautéed in olive oil).
