Ultimate Coleslaw


This coleslaw looks and tastes like the traditional coleslaw from my childhood without all the mess. It is light and refreshing and is adaptable to many palates!

Ultimate Coleslaw

Salad Ingredients:

  • 4 cups shredded cabbage, mixed variety – green, red and/or napa
  • 1 large carrot, shredded
  • 1/4 cup parsley, chopped
  • 8 mint leaves, chopped fine
  • 1/4 cup currants
  • 1 apple, peeled and grated
Dressing Ingredients:
  • 1 1/2 – 2 tbsp. mayonnaise, depending on creaminess desired
  • 2 tbsp. freshly squeezed lemon juice
  • 1 tsp. maple syrup
  • 1 tsp. Coconut Secret, coconut aminos (or gluten free tamari)
  • 1 small shallot, minced
  • 1 tsp. celery seed
  • sea salt and fresh ground pepper

Directions:

Combine cabbages, carrots, parsley, mint, currants, and apple in a large bowl. Toss together and set aside. Combine dressing ingredients in a small bowl and blend with a whisk or fork until mixed well. Pour dressing over vegetable mixture and toss well to coat. Enjoy!
